Cranberry Sage Turkey Meatballs (Appetizer)

Yield: ~24 bitesize meatballs | Oven: 400°F (205°C) for 12-15 min to 165°F

1 lb ground turkey (9396% lean)

1/3 cup very finely chopped fresh cranberries (or 23 Tbsp unsweetened dried, minced)

1/4 cup minced onion

1 egg (or flax egg: 1 Tbsp ground flax + 3 Tbsp water)

1/3 cup almond flour (or oat flour)

1 Tbsp chopped fresh sage (or 1 tsp dried)

1/2 tsp garlic powder, 3/4 tsp kosher salt, 1/4 tsp pepper

Mix gently, scoop 1 Tbsp balls, bake 12-15 min to 165°F.

Optional seer in pan prior to baking

Dip: 1 cup Greek yogurt + 1 Tbsp lemon + 1 Tbsp dill + pinch salt/pepper.

Cranberry Ginger Holiday Mocktail (No Sugar Added)

Serves 6

4 cups unsweetened cranberry juice

3 cups sparkling water/club soda (add just before serving)

1 Tbsp grated fresh ginger (or 1/2 tsp ground)

1 orange, thinly sliced

1 cup fresh cranberries + ice

Muddle ginger into juice; add orange/cranberries; chill. Add sparkling water to serve. Optional: rim

with crushed freeze dried raspberries.
